Access 3 Hospitality: Practical Cookery

Welcome to the subject homepage for Access 3 Hospitality: Practical Cookery.

The Access 3 Hospitality: Practical Cookery course at SCQF level 3 is primarily a practical course. It has been designed to encourage the development of practical skills and understanding appropriate to food preparation and cooking.

The course aims to provide candidates with the techniques and skills required for food production, both in the home and in the hospitality sector.

This qualification is widely available in schools and colleges.

This course is 100% internally assessed.

This course provides the knowledge required for The Royal Environmental Health Institute of Scotland (REHIS) Introduction to Food Hygiene Certificate. Successful candidates can be entered for dual certification.

This course is aimed at school and college candidates who are looking to acquire the knowledge and skills required in the food and hospitality industry.

Access

Entry is at the discretion of the centre.

Candidates could progress to:

  • Intermediate 1 Hospitality: Practical Cookery or its Units
  • Intermediate 1 Hospitality or its Units (this is a Skills for Work Course)

Centres seeking approval should contact the Business Development & Customer Support Team for guidance on completing the combined CA1/SA1 form.

Structure

The course is comprised of four mandatory Units.

The mandatory Units are:

  • Food Preparation Techniques: An Introduction (D263 09)
  • Cookery Processes: An Introduction (D264 09)
  • Hospitality: Organisation of Practical Skills (D9NL 09)
  • Food Hygiene for the Hospitality Industry (F792 09)

The course is comprised of four mandatory Units. There is no external assessment.

Units are assessed using written/oral evidence and practical performance evidence supported by assessor observation checklists.

In order to gain the award of the course, the candidate must pass the internal assessments associated with the four Units.

NABs are available for all Units. These can be downloaded from SQA’s secure website.
