Chef Gary shares the skills that make him a master

Together with the help of City of Glasgow College lecturer, and reigning MasterChef: The Professionals champion Gary Maclean, SQA has produced a series of short film clips that are sure to develop the skills of budding chefs across the country!

The film clips, produced to guide candidates completing SQA National Qualifications in Hospitality: Practical Cookery and Practical Cake Craft, are essential viewing to anyone looking to sharpen up their knife skills, improve their pastry production, master their meringues, or confidently create chocolate crafts.

Gary, who has been a chef lecturer at City of Glasgow College for over 16 years, kindly offered to demonstrate his skills and share some top tips which are as useful for seasoned professionals, as they are for those just getting started in the kitchen.

From using a dash of lemon juice to ensure a perfect meringue, to making sure your pastry is flattened slightly before it proves making it instantly useable once it’s out the fridge, to proper techniques when using a knife; these clips will give aspiring chefs the edge in the kitchen.

Speaking about his involvement, Gary said: "It was great to be asked by SQA to create these skills videos, knowing that they will be used to help people develop basic cookery techniques, and build their confidence in the kitchen, either as a professional chef or when cooking at home."
